“Angel” Eggs ~Allison Frassoni

A delicious take on traditional deviled eggs. These eggs are so good I call them “Angel” Eggs!

  • Hardboiled Eggs (12)
  • Thick Cut Bacon (half pound)
  • 1/2 cup Mayonnaise
  • 3 tablespoons Light Brown Sugar
  • Cayenne Pepper (to taste)
  • Ground Cinnamon (just a pinch)
  • 2 teaspoons whole grain Mustard
  • 1 tablespoon finely chopped fresh Dill, plus more for garnish
  • 1 tablespoon Cider Vinegar
  • 1 teaspoon Worcestershire Sauce
  • 2 Scallions, minced
  • Salt (to taste)
  • Smoked Paprika, for garnish

Directions:

  1. Hard boil the eggs, allow them to cool in refrigerator until ready to use.
  2. Preheat oven to 350 degrees.
  3. In a small bowl, mix together the brown sugar, pinch of cayenne pepper, and the cinnamon. Place the bacon on a wire rack set over a baking sheet. Sprinkle each slice of bacon with some of the mixture and bake, for about 10 minutes. Flip the bacon, sprinkle with the remaining mixture and continue to bake until crispy, about 10 more minutes. When bacon is cool, chop and set aside, reserving about a quarter for garnish.
  4. In another bowl, mix together mayonnaise, mustard, dill, cider vinegar, Worcestershire sauce, pinch of cayenne, scallions and chopped bacon, season with salt to taste.
  5. Slice eggs in half lengthwise and remove yolks, add yolks to mixture and mash together with fork until smooth.
  6. Fill egg whites with mixture. Garnish with extra bacon, dill and smoked paprika. Enjoy!

This is the story of Helen Roseveare who since childhood dreamt of going to faraway places to teach others about God. She became a doctor with missionary training who went to the Congo in the center of Africa. There she built a hospital and cared for the sick, teaching people how they could trust Jesus as their Savior and King. Despite much opposition, she had the faith to persevere even in the face of many trials and personal suffering through illness. In the midst of it all, Helen held onto the verse, “Be still, and know that I am God.” (Psalm 46:10) God’s words always filled her heart with peace and strength to persevere. Helen Roseveare lived from 1925 to 2016. She is a modern-day hero of the faith.

(At the end of this book there are some interactive questions and activities for kids, and the entire family.   This biography is one of a series called “Do Great Things for God” that are designed to show kids that God uses ordinary people to do extraordinary things.)

Luke 24:6-7

Materials Needed:

  • Paper
  • Glue Stick
  • Marker
  • Scissors
  • Silk or Paper Flowers/ Faux Flowers

Instructions:

  1. Fold paper in half. Trace hand with pinky part of palm on the crease of the fold.
  2. Cut out hand (both halves) without cutting the folded crease part so when finished it opens like a book.
  3. Write favorite scripture inside. For Easter, I chose Luke 24:6-7.
  4. Cut out Cross with a different color paper and glue on the opposite inside of the book hands. Add faux flowers.
  5. Share with family and friends and use as part of family prayer time!
