Pasta Primavera

Surprise! A spring recipe for this time of year made with spring veggies.

Pasta Primavera is a classic pasta dish. It is a favorite during the spring months, into summer because it is made with lots of vegetables, a light lemon cream sauce, Parmesan cheese and fresh herbs. It is light, refreshing and delicious—a good way to get your kids to eat their vegetables!!

Prep Time: 20-25 min.

Cooking Time: 10-12 min.

Yield: 4 servings

cooking1 Ingredients:

  • 1/4 pound sugar snap peas
  • 1/2 pound asparagus
  • 2 tablespoons unsalted butter
  • 3/4 cup green peas
  • 1/4 cup thinly sliced shallot (preferred) or spring onion, white part only
  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon fine sea salt, more as needed
  • black pepper (as needed)
  • 12 ounces fettuccine or tagliatelle
  • 2/3 cup grated Parmesan, at room temperature
  • 1/2 cup creme fraiche or whole milk Greek yogurt, at room temperature
  • 3 tablespoons finely chopped parsley
  • 1 tablespoon finely chopped tarragon
  • 3 small slices of lemon

cooking 2.1 Preparation:

  1. Bring a large pot of well salted water to a boil on medium-high heat
  2. While the water is coming to a boil, carefully slice stems of each snap pea and cut asparagus stems 4-6 inches—leaving asparagus tips/tops whole.
  3. Melt butter and a few squirts of lemon in a large skillet over medium high heat. Add snap peas, asparagus, English peas and onion. Cook until vegetables are barely tender (3-4 mim.)—not too soft or mushy—stir in garlic and cook 1 minute more. Season with salt—cook 1 more minute. Season with salt and pepper and a squirt or 2 of lemon juice,, stir a bit; set aside.
  4. Drop pasta into boiling water and cook until al dente—1 to 3 minutes for fresh pasta, more if dried pasta.  Drain well and transfer pasta to a large bowl. Immediately toss pasta with vegetables, Parmesan, creme fraiche, and herbs. Season with salt and pepper if needed. Can top with cherry or grape tomatoes (optional).  Yum!





Spring Crafts

Tissue Paper Cherry Blossoms

Materials:

  • Paper (white or light blue would work best)
  • Pink tissue paper
  • Brown or Black marker
  • Glue

Instructions:

  1. Draw tree trunk and branches on paper.
  2. Rip and crumble small pieces of pink tissue paper.
  3. Glue tissue paper pieces onto tree.

 

Edible Chick Nests

Materials:

  • Marshmallows, butter, vanilla extract, and dry chow mein noodles for the nests.
  • Pastel candy eggs and Peeps

Instructions:

  1. Make your chick nests similar to how you would make rice Krispie treats (in fact, if the chow Mein noodles seem strange, feel free to swap this step out for actual rice Krispie treats!)
  2. Easiest way to form the nest is to make small balls and hollow out the middle or use a plastic easter egg to push into the ball to form next—move quick they harden fast.
  3. Add your peep and some pastel candy eggs and voila!
