Summer Recipe: “Not so fruit cake, fruit cake”!

Ingredients:

  • watermelon, cantaloupe, honeydew and/or pineapple
  • strawberries, blueberries, blackberries and/or raspberries
  • kiwi
  • grapes
  • toothpicks
  • fresh mint (optional)

**Fruit choices can be picked based on personal favorites. The most important fruits are for the “cake” portions that make up the base of the dessert

Directions:

  1. Cut skin/rind off of the watermelon, cantaloupe, honeydew and/or pineapple to create “cake” layers. It works best to cut both ends off, lay flat and slice off skin/rind around the sides
  2. Stack your “cake” layers placing toothpicks to hold together in place
  3. Add decorations of other berries and fruits from top to bottom in a cascading design, using toothpicks to hold in place; remember this is not an exact science just do as much or as little as you choose
  4. Add sprigs of fresh mint for appearance and flavor

To Serve:

  • Place on a cake serving dish, keep cool in the refrigerator until ready to serve

FUN with Kids Recipe ~ For Those Hot Summer Days!

Materials Needed:

  • 2 large Ziploc bags
  • ice
  • salt
  • ¼ cup whole milk
  • ¼ cup half and half/or heavy whipping cream
  • 1 tablespoon white sugar
  • ¼ teaspoon vanilla extract

**If you want to make chocolate ice cream add 1 teaspoon of cocoa powder and substitute whole milk with whole chocolate milk

**If you want to make strawberry ice cream add 1 teaspoon of dried strawberries and substitute whole milk with whole strawberry milk

** After the ice cream is mixed you can add: chocolate chips, oreo crumbles, mini m&ms, peanut butter chips, or anything else that you love in your ice cream .

 

Instructions:

  1. Combine milk, half-and-half (or heavy cream), sugar and vanilla extract in a pint-size resealableplastic bag; seal tightly.
  2. Put ice, 3 tablespoons salt, and the bag containing the milk-cream mixture into a gallon-size resealable plastic bag and seal tightly.
  3. Rock the bag back and forth until contents thicken into ice cream, about 10 minutes. Wipe salt from the top of the pint-size bag before opening to prevent salt from getting into the ice cream.
  4. Scoop your yummy creation into cones or serving dishes and enjoy!

Summer Kids Craft: Jonah and the Whale

Materials Needed:

  • Blue Solo Cup (if you can’t find blue you can always paint blue as an added step)
  • Construction Paper- blue
  • Balloon (white or skin color)
  • String
  • Tape and Glue
  • Googly Eyes
  • Black Sharpie
  • Rice or Playdough (small amount)

Instructions:

  1. Draw Jonah onto the balloon with the black sharpie
  2. Fill balloon with either a small amount of rice or playdough and tie balloon off
  3. Tie string to balloon
  4. Tape string into bottom of cup. Make sure it is secure. (Remember if you didn’t find a blue solo cup, wait for the blue paint to dry before this step)
  5. Cut out construction paper tail and tape onto the bottom outside of the cup
  6. Put googly eyes onto the whale
  7. Now you can tell the story of Jonah and play with your “Jonah and the Whale “cup game by trying to get Jonah in and out of the whale cup!
